New street food pop-up Hush Courtyard, at Castle Restaurant, Newark, offers foodies flavours from across globe




Flavours from across the globe can be sampled without the need to travel thanks to a new pop-up food experience.

The outdoor street food pop-up has opened in Newark, serving cuisine from around the world.

Layton Barnes opened Hush Courtyard with his business partner Darren Hampton four weeks ago at the Castle Restaurant on Castlegate.

It is believed to be the first of its kind in the town and features four stalls and a bar where customers can enjoy a drink to accompany their freshly-prepared food.

The four types of food currently on the menu are Asian infusion, Mediterranean, Mexican and American smoke house, however, these may be changed.

Layton, who has been a chef for nine years, said he and Darren wanted to offer a street food experience with a speak-easy vibe.

Hush Streetfood will be open throughout summer as well as takeaway options.

Layton said: “Surprisingly, we have found that on days when it has rained we have had more people, but we have had constant support throughout.

“It’s just about getting our name out there more.”

The business owner moved to Newark two years ago and joined forces with Darren, who has 20 years of chef experience.

Layton, originally from South Africa, began making and selling sushi from home during the national lockdown and quickly noticed a gap in the market for his food.

“With my skillset and experience, I needed to grow,” Layton said.

Hush Courtyard is open Wednesday to Sunday, serving both lunch and dinner to hungry locals.
